My new gourmandise : Canele

I didn’t even know about it until a few weeks ago. I heard about it but I didn’t pay attention. My mind was somewhere else until basically I started to struggle with the English weather. Tired of this little rascal truly unpredictable, it seems like my craving for pastry increased even more. You know what ? I don’t even feel guilty about it because I am tired, I need something sweet, comforting and tasty… and I lay my eyes on this small striated cylinder pastry and decided to give it a try. And let me tell you since then, I am soooo addicted to it!!

I really think that the contradiction between the appearance of this bordelais pastry and the inside of it creates something remarkable in terms of taste, sweetness and deliciousness. It is really a difficult challenge to prepare these caneles as they’ve made at Bordeaux… and I don’t want to try to prepare them, I just want to eat them ! Is it their size which is so deceptive but I have no regrets whatsoever to savour this gourmandise slowly, delicately and ask for more.

Just  for one moment, imagine yourself alone ready to enjoy this pastry, for you, only, with no distractions at all, just the silence, the canele and you. Just visualize your mouth taste a clever mix of soft and tender custard center and a dark, thick caramelized crust, you know what I mean… it’s so good that even writing about it makes me want to eat one right now.
